For the Caramelized Apples:
- 2 1/4 cups green apples, peeled and diced into small cubes
- 4 tablespoons butter
- 1/4 cup sugar
For the Dough:
- 1 cup butter
- 1 cup packed brown sugar
- 1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- A pinch of salt
For the Glaze:
- 1 cup powdered sugar
- 1 tablespoons water
Prepare the Caramelized Apples:
In a skillet over medium-high heat, add the diced apples, 4 tablespoons of butter, and 1/4 cup of sugar.
Cook, stirring occasionally, until the apples are golden and caramelized, about6 to 7 minutes. Remove from heat and let cool.
Prepare the Dough:
In a large bowl, beat 1 cup of butter with 1 cup ofpacked brown sugar and 1/4 cup of sugar until creamy, about 3 minutes. Add the eggs and vanilla extract, beating for another minute until wellcombined. In another bowl, mix the rolled oats, flour, cinnamon, baking soda, and salt.
Add the dry ingredients to the butter and sugar mixture, mixing well.
Fold in the caramelized apple cubes until well distributed.
Cover the dough and refrigerate for at least one hour.
Form and Bake the Cookies:
Prepare the Glaze:
In a small bowl, mix the powdered sugar with 1 tablespoon of water.
Gradually add more water until the desired glaze consistency is reached.
Drizzle the glaze over the cooled cookies in decorative patterns.
- Apple Selection: Use green apples like Granny Smith, as their tartness
complements the sweetness of the sugar and caramel.
Make sure to dice the apples into small, uniform cubes to ensure even
cooking.
- Caramelizing the Apples: Cook the apples over medium-high heat, adjusting
the temperature if they start to burn instead of caramelizing.
Stir the apples frequently to prevent sticking and ensure the liquid evaporates
properly, leaving the apples well caramelized.
- Butter in the Dough: The butter should be at room temperature to easily mix
with the sugars.
Beat the butter and sugars until the mixture is fluffy and light; this helps give
the cookies a soft texture.
- Integrating Ingredients: Mix the dry ingredients (oats, flour, cinnamon,
baking soda, and salt) well before adding them to the butter mixture. This
ensures even distribution of leavening agents and spices.
When adding the caramelized apples, mix gently to avoid breaking the apple
cubes.
- Chilling the Dough: Chill the dough in the refrigerator for at least an hour.
This helps the oats absorb some moisture and the dough to firm up, making it
easier to form the cookies.
- Baking: Ensure the oven is fully preheated before baking the cookies.
- Glazing: Adjust the amount of water in the glaze to achieve the desired
consistency. The glaze should be thick enough to form drizzles on the cookies
but not too runny.
You can add a touch of cinnamon or a splash of lemon juice to the glaze for
extra flavor.
- Storage: Store the cookies in an airtight container at room temperature. If you
store them in the refrigerator, let them come back to room temperature before
serving to enjoy their best texture.
