For the filling:
- 3 tbsp butter
- 3 apples (2 cups) peeled and diced into small cubes
- 1 1/2 tsp lemon juice
- 1/4 cup sugar
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of salt
- 1 tsp cornstarch
For the cookies:
- 2 store-bought refrigerated pie crusts
- 1 egg, beaten for brushing
For the topping:
- 3 tbsp sugar
- 2 tsp cinnamon
Prepare the dough:
Preheat the oven to 350°F (175°C).
On a surface, roll out the pie crusts.
Using a round cutter approximately 3 inches (7.5 cm) in diameter, cutout 12 circles. With the remaining dough, cut thin strips using a knife or pizza cutter.
- Type of Apples: Use firm and slightly tart apples, like Granny Smith or
Honeycrisp, for a better balance of flavors and texture.
- Preparing the Filling: If you prefer a softer filling, you can cook the apples for
a few additional minutes. Just make sure they don't completely fall apart.
- Handling the Dough: Keep the dough refrigerated until you're ready to use it.
This makes it easier to handle and helps the cookies maintain their shape
during baking.

use a ruler to measure and cut the dough strips.
