Your favorite breakfast made into a dessert. These chocolate chip pancake mix cookies are soft, buttery, and loaded with gooey chocolate chips! Made with only a handful of ingredients they’re the perfect cookie recipe for when you’re short on ingredients.

Ingredients
  

  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 cups pancake mix
  • 2 tbsp vanilla
  • 1 cup chocolate chips

Instructions
 

Preheat the oven:

  • to 350°F (180°C). Line a baking sheet with parchment
    paper.

Prepare the cookie dough:

  • In a large bowl, beat the softened butter with the sugar and brown
    sugar until well incorporated and smooth.
  • Add the egg and vanilla. Beat until the mixture is fluffy.
  • In the same bowl, add the pancake mix and mix until all the ingredients
    are well combined.
  • Finally, add the chocolate chips and mix until evenly distributed
    throughout the dough.

Chill the dough:

  • Cover the bowl with plastic wrap and refrigerate the dough for at least
    30 minutes.

Shape the cookies:

  • Remove the dough from the refrigerator and form cookies using
    approximately 3 tablespoons of dough per cookie.
  • Place the portions of dough on the prepared baking sheet, leaving
    space between each one to allow for spreading during baking.

Bake:

  • Bake the cookies in the preheated oven for 12-15 minutes, or until the
    edges are slightly golden.
  • Let the cookies cool on the baking sheet for at least 10 minutes before
    transferring them to a wire rack to cool completely.

Notes

  • Mix-ins: Get creative with your add-ins! Chopped nuts, dried fruit (like raisins
    or cranberries), peanut butter chips, butterscotch chips, or even white
    chocolate chips would all be delicious additions to this recipe.
  •  Chilling: Chilling the dough is important for these cookies. It allows the butter
    to solidify a bit, which helps the cookies keep their shape and prevents them
    from spreading too thin.
  • Baking Time: The 12-15 minute baking time is a good starting point, but keep
    an eye on your cookies as they bake. Ovens can vary, so they might be done a
    few minutes sooner or later. You'll know they're done when the edges are
    golden brown and the centers are just slightly set.
  • Soft vs. Chewy: If you prefer softer cookies, take them out a minute or two
    before they look completely done. For chewier cookies, let them bake a
    minute or two longer.
  • Double Chocolate: Use half milk chocolate chips and half semisweet
    chocolate chips for a delicious chocolate combination.
