Copycat Crumbl Pink Sugar Cookie

A soft and sweet crumble sugar cookie with delicious pink icing.

Ingredients
  

  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3 cups all-purpose flour
  • 2 tsp baking powder

Pink icing

  • 1/2 cup salted butter, softened
  • 3 cups powdered sugar
  • 1 tsp almond extract
  • 3 tbsp milk
  • neon pink food coloring

Instructions
 

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • In a mixing bowl beat the butter and sugar until fluffy.
  • Add in the eggs, vanilla, and almond extracts and mix well. Then add in the flour and baking powder, mix until a dough forms.
  • Scoop out the dough into balls and place on the lined cookie sheet, use a glass dipped in flour to flatten the balls slightly.
  • Bake in the oven for 9-11 minutes, until the edges are golden.
    While the cookies are baking mix all of the icing ingredients together until smooth and creamy, then place the icing in a piping bag with a small cut tip.
  • Pipe a swirl of icing on slightly warm cookies then cool completely on a wire rack.
