Lemon Crinkle Cookies

A soft sweet and buttery crinkle cookie with a burst of lemon flavor and finished off with powdered sugar.

Ingredients
  

  • 1/2 cup butter, melted and cooled
  • 1 cup granulated sugar
  • 1 egg + 1 egg yolk
  • 2 tbsp + 1 tsp fresh lemon juice
  • 3 tsp fresh lemon zest *plus more for garnish
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • powdered sugar for rolling

Instructions
 

  • In a large bowl whisk together the butter and sugar, make sure the melted butter has cooled.
  • Add in the egg and egg yolk then vanilla, lemon juice & zest.
  • In a separate bowl whisk together the flour, baking soda, and salt then add to wet mixture.
  • Chill in the fridge for 2-4 hours.
  • Preheat the oven to 325F and line a baking sheet with parchment paper.
  • Scoop out the cookie dough, roll it into a ball then roll in powdered sugar.
  • Place on the lined baking sheet and bake for 10-12 minutes, cool completely, garnish with lemon zest, serve, and enjoy!
