Lemon Crinkle Cookies
A soft sweet and buttery crinkle cookie with a burst of lemon flavor and finished off with powdered sugar.

- 1/2 cup butter, melted and cooled
- 1 cup granulated sugar
- 1 egg + 1 egg yolk
- 2 tbsp + 1 tsp fresh lemon juice
- 3 tsp fresh lemon zest *plus more for garnish
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- powdered sugar for rolling
In a large bowl whisk together the butter and sugar, make sure the melted butter has cooled.
Add in the egg and egg yolk then vanilla, lemon juice & zest.
In a separate bowl whisk together the flour, baking soda, and salt then add to wet mixture.
Chill in the fridge for 2-4 hours.
Preheat the oven to 325F and line a baking sheet with parchment paper.
Scoop out the cookie dough, roll it into a ball then roll in powdered sugar.
Place on the lined baking sheet and bake for 10-12 minutes, cool completely, garnish with lemon zest, serve, and enjoy!
