Mint Chocolate Chip Shortbread Cookies
Delicious buttery crumbly shortbread cookies with chocolate chips and mint flavoring, these cookies are a delight!

- 1 cup butter, softened to room temperature
- 2/3 cups powdered sugar
- 2 cups all-purpose flour
- 1 cup mini milk chocolate chips *or you can use mint chips
- 1 tsp mint extract
- 1 drop green food coloring gel
Preheat the oven to 350F, line a cookie sheet with parchment paper.
In the mixing bowl of a stand mixer, place the softened Butter, and whip with the whisk attachment until light and fluffy. Alternatively, you can use a hand mixer. Add the powdered sugar, and blend on low until well mixed.
Add the mint extract, and food coloring, and mix until well blended, and completely green.
Mix in the flour a 1/3 cup at a time, mixing between additions, until the dough is completely blended and smooth.
Fold in the chocolate chips. Drop the cookie dough with a spoon onto the lined baking sheet, and push down with the spoon or your hands.
Bake for 18 to 20 minutes, or until the cookies are lightly golden brown around the edges. Remove the Cookies to a wire rack to cool completely.
