Oatmeal chocolate chip cookies

A deliciously soft and chewy oatmeal chocolate chip cookie that takes just 20 minutes to make!

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup unsalted butter softened to room temperature
  • 1/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 1.5 cups rolled oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat the oven to 375F and line a baking sheet with parchment paper.
  • In a bowl whisk together the flour, baking soda, and salt - set aside.
  • In a large mixing bowl cream the butter and sugars until smooth.
  • Mix in the vanilla and egg.
  • Gradually add the flour mixture to the sugar mixture.
  • Fold in the oats and chocolate chips until fully incorporated.
  • Bake for 8-10 minutes just until the edges are beginning to turn light brown. Let cool for 2-3 minutes then transfer to a wire rack.
