For the Cookies
- 1 egg
- 1/3 cup natural yogurt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/3 cup olive oil
- 2 cups all-purpose flour
- 2 tbsp orange zest
- 2 tbsp orange juice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch salt
For the Glaze:
- 1 cup powdered sugar
- 1 tbsp lemon juice
In a bowl, mix the egg, yogurt, white sugar, brown sugar, and olive oil. Whisk until well combined.
Add the orange juice and orange zest, then mix again.
Add the flour, baking powder, baking soda, and salt. Stir with a spatula until a homogeneous dough forms.
Refrigerate the dough for at least 30 minutes.
Preheat the oven to 350°F (180°C).
Line a baking sheet with parchment paper.
Using a #20 ice cream scoop, place portions of dough onto the baking sheet, leaving space between them to allow for expansion while baking.

For the glaze:
