Valentine's tic tac toe butter cookies

This Valentine's tic tac toe board is a fun and tasty buttery cookie that is perfect to give as a gift for Valentine's day.

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/3 cup sugar
  • 1 egg yolk
  • 1/2 tbsp vanilla extract
  • 1 cup flour *if dough is too soft you may need a little more

Royal icing

  • 1 egg white
  • 1 cup sugar
  • lemon juice
  • red food coloring

Instructions
 

  • Using a hand mixer, cream the softened butter and granulated sugar together.
  • Add the egg yolk and vanilla extract. Keep beating for a few minutes.
  • Stir in the flour, then use your hands to knead the dough. Roll into a ball and cover with plastic wrap then chill in the fridge for 30 minutes to 1 hour.
  • Preheat the oven to 350F.
  • Roll out the dough using a rolling pin, use parchment paper on both sides of the dough. Place the rolled dough in the fridge to chill for up to one hour.
    Preheat oven to 350F.
  • Once the dough is chilled use small heart and circle cookie cutters for your tic tac toe pieces, then make your square board with the remaining dough. *Note- this recipe will make one tic tac toe board.
  • Bake the cookies for 8-10 minutes or until they are golden on the top.
  • For the royal icing, using a mixer, beat the egg white for 30 seconds and start adding sugar gradually until you reach the desired consistency. Then add some drops of lemon juice.
  • Mix the royal icing with red coloring, and prepare the frosting. You will want to leave some icing white, make some of it pink and some red, depending on how you want to decorate the cookie pieces.

Notes

This recipe makes one tic tac toe board and pieces, if you want to make more than one board then adjust the recipe based on how many boards you want to make.
