FatBoy’s Peppermint And Gingerbread Ice Cream Sandwiches Are Here (But Only In 13 States)

Boxes of FatBoy Peppermint and Gingerbread ice cream sandwiches, six to a box, marked limited edition.

FatBoy holiday ice cream sandwiches come in two limited-edition flavors this year, Peppermint and Gingerbread. Casper’s Ice Cream, the Richmond, Utah, company behind FatBoy, announced them on Wednesday, November 4, and they’re sold at select Albertsons, WinCo, Bashas’, Eight Point, AFS and Bristol Farms stores in 13 states: Arizona, California, Hawaii, Idaho, Illinois, Indiana, Iowa, Nevada, New Mexico, Oregon, Texas, Utah and Washington. FatBoy says availability varies by retailer and market, so not every store in those states will have them.

Two flavors, two different wafers

The wafers are where the cookie comes in, and each flavor gets its own.

Peppermint puts peppermint ice cream between dark chocolate wafers. (The box itself says “dark chocolaty.”) It’s not FatBoy’s first peppermint, either: back in 2018, the brand’s blog spotlighted a holiday peppermint sandwich on two chocolate wafers. For the same mint-and-chocolate pairing in a cookie, our chocolate peppermint thumbprint cookies are gluten-free, filled with dark chocolate ganache and topped with crushed candy canes. Our Peppermint Drizzle Cookies go simpler, with a peppermint butter cookie and a zigzag of melted Andes mints.

Gingerbread pairs gingerbread-flavored ice cream with graham wafers, which FatBoy calls a creamy take on the classic holiday cookie. Our homemade graham crackers use graham flour, honey and cinnamon, and our Copycat Starbucks Ginger Molasses Cookies bring the ginger, cinnamon and molasses of gingerbread in a sugar-rolled cookie.

“Peppermint and gingerbread bring a sense of nostalgia,” said Russell Stokes, CEO of Casper’s Ice Cream. He said the company wanted the frozen versions to “feel both familiar and a little unexpected.”

Price, size and where to look

Both flavors come six sandwiches to a box, at a suggested retail price of $5.99. The Gingerbread box lists six 5-fluid-ounce bars. Actual shelf prices can differ by store.

FatBoy says the sandwiches are available now for a limited time. It hasn’t given an end date. To check a store near you, FatBoy’s where-to-buy page searches by ZIP code.

If you live outside those 13 states, holiday cookie flavors are turning up at the ice cream counter too. Dairy Queen and Baskin-Robbins have a Peanut Butter Blossom Blizzard and Frosted Sugar Cookie Ice Cream on their holiday menus.
