Butter

For this recipe, you need 3/4 cup of butter that is softened at room temperature. Unsalted butter is best for this recipe so you can control the flavor.

Salt

What is the secret to the right consistency and rise for these cookies?

There are two things you need to consider. The temperature of your butter and how long you beat the butter with the other ingredients for. The temperature of the butter shouldn’t be too warm, you just want to ensure that the butter is softened. If it is too runny you will get very flat cookies. If you overmix the butter with the other ingredients before you add the flour it can also cause these cookies to be flat and not have the right texture.

How to make the St Patrick’s Day Pistachio Cookies

When it comes to baking cookies you need to start off by gathering all of your ingredients together. Then you will want to preheat the oven to 350F and line baking sheets with parchment paper.

In a large bowl whisk together the flour, pudding mix, baking soda, and salt then set aside until you are ready for the flour mixture. 

In a mixing bowl beat butter, sugars, egg, and food coloring together until smooth. You could use a hand mixer for this if you wish. Add in the dry ingredients and mix until thoroughly combined.

Scoop cookie dough onto the lined baking sheet. You could use a cookie scoop for this to help you evenly distribute the cookie dough mixture. Then bake in your preheated oven for 10 minutes. Once baked you can then cool the cookies on a wire rack. 

Melt the almond bark in a small bowl in the microwave for 30-second intervals stirring each time until smooth. Don’t do this for too long as you don’t want to burn the chocolate.

While the cookies are on the cooling rack you can then cover ½ of each cookie with the melted chocolate and add your chosen themed sprinkles over the chocolate. Make sure you allow time to set. Then you can enjoy your green St. Patrick’s day cookies.



Take the St Patrick’s Day Pistachio Cookies to the next level

If you like the idea of a theme then you could invest in a shamrock cookie cutter to make them look very authentic.

We used almond bark for this recipe but you could use a cup of the white chocolate chips instead. They will taste just as good. You could also sprinkle some white chocolate chips on the cookie along with the sprinkles.

You could add a little green color to the melted almond bark to keep everything green for these St Patrick’s Day cookies.

Another option is to use milk or dark chocolate if you prefer those flavors. This is down to personal preference.

  • In a mixing bowl beat butter, sugars, egg, and food coloring together until smooth. Add in the dry ingredients and mix until combined.

  1. Hi. I believe your recipe as listed today is incomplete. There isn’t a measurement listed for granulated sugar which I’m guessing there must be some considering the pictures and multiple mentions of “sugars.” I’m currently baking based on an assumption of how much. We’ll see how it turns out.
