Apple pie cookie bars

Warm cinnamon apples with a sugar cookie base and sweet crumble topping make these cookie bars a delicious treat to bake!

Ingredients
  

Apple filling

  • 4.5 cups apples, cubed (peeled or not peeled)
  • 2.5 tbsp flour
  • 2 tsp lemon juice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Crust & crumble topping

  • 2 cups all-purpose flour
  • 3/4 cup + 1 tbsp unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 350F and line an 8x8 baking dish with parchment paper.
  • Cut and dice the apples, you can peel them if you want, I did not. Mix diced apples with the flour, lemon juice, cinnamon and nutmeg then set aside.
  • To prepare the crust and crumble combine the flour, sugar, and cinnamon then add the cold cubed butter. Use your hands to combine the mixture until a crumble forms.
  • Press ⅔ of the mixture into the prepared baking dish, layer on the apple mixture then top with the remaining crumble mixture.
  • Bake for one hour, cool completely and slice into 8 bars or if you want small bars you can cut into 16.
