Apple pie cookie bars
Warm cinnamon apples with a sugar cookie base and sweet crumble topping make these cookie bars a delicious treat to bake!

Apple filling
- 4.5 cups apples, cubed (peeled or not peeled)
- 2.5 tbsp flour
- 2 tsp lemon juice
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Crust & crumble topping
- 2 cups all-purpose flour
- 3/4 cup + 1 tbsp unsalted butter, cold and cubed
- 1/2 cup granulated sugar
- 1 tsp cinnamon
Preheat the oven to 350F and line an 8x8 baking dish with parchment paper.
Cut and dice the apples, you can peel them if you want, I did not. Mix diced apples with the flour, lemon juice, cinnamon and nutmeg then set aside.
To prepare the crust and crumble combine the flour, sugar, and cinnamon then add the cold cubed butter. Use your hands to combine the mixture until a crumble forms.
Press ⅔ of the mixture into the prepared baking dish, layer on the apple mixture then top with the remaining crumble mixture.
Bake for one hour, cool completely and slice into 8 bars or if you want small bars you can cut into 16.
