Ingredients
  

  • 1/2 cup butter 1 stick
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1 1/4 cups all-purpose flour
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 cup chopped chocolate
  • 1/2 cup white chocolate chips
  • 1/4 cup chocolate chips
  • Pinch of salt

Instructions
 

  • In a bowl, lightly melt the butter until warm.
  • Add the cocoa powder and mix well until combined.
  • Incorporate the white sugar and brown sugar, mixing until well combined.
  • Add the egg and vanilla extract, beating until you obtain a homogeneous mixture.
  • Add the flour, baking powder, a pinch of salt, the chocolate chips, the chopped chocolate, and the white chocolate chips. Mix well.
  • Refrigerate the dough for at least 1 hour.
  • Preheat the oven to 350°F (180°C).
  • Line a baking sheet with parchment paper.
  • Using a #20 ice cream scoop, form dough balls and place them on the baking sheet, keeping them spaced apart.
  • Bake for approximately 14 minutes.
  • After removing from the oven, use a metal ring to shape them into a round form.
  • Let them cool on the baking sheet before handling.

Notes

  • Use higher-quality chocolate: Opt for premium chocolate for a more intense and authentic flavor.
  • Include nuts: Chopped walnuts, almonds, or hazelnuts can add texture and extra flavor.
  • Sprinkle flaked salt: A touch of flaked salt on the cookies balances the sweetness.
  • Reduce the baking time: For chewier cookies, remove them after 12 minutes instead of 14 and let them cool on the baking sheet.
  • Shortening substitution: Use melted coconut oil in the same amount for a slightly different but equally delicious texture.
  • Wheat flour substitution: You can use oat flour or a gluten-free blend in the same proportion for a gluten-free version.
  • Brown sugar substitution: Use honey, maple syrup, or coconut sugar for a more natural sweetness and a distinct flavor.
  • Cocoa powder substitution: If you don't have cocoa powder, you can melt 50g of dark chocolate and add it to the mix for a richer, creamier flavor.
