Insomnia Cookies Adds Sweet Potato Pie, Pecan Pie Chocolate Chunk And Apple Crumble Cookies Ahead Of Thanksgiving
Insomnia Cookies’ Sweet Potato Pie cookie leads a trio of pie-inspired cookies at the top of the late-night bakery’s online menu as of Friday, November 6. Next to it are a Pecan Pie Chocolate Chunk cookie and an Apple Crumble Crunch cookie made with granola from Oat Haus. All three sit in Insomnia’s Classic cookie lineup, not the larger Deluxe one, and the chain hasn’t said how long they’ll stay.
What goes into each one
Sweet Potato Pie is a brown sugar sweet potato cookie with cream cheese chunks and chewy marshmallow, which Insomnia pitches as the pie in cookie form. It isn’t the chain’s first try at the flavor. In December 2023, Snack Food & Wholesale Bakery reported a vegan Sweet Potato Pie Classic, made with cinnamon, vanilla flavoring and vegan marshmallows, in Insomnia’s Holiday Spirit collection. This year’s cookie isn’t labeled vegan on the menu, where Insomnia’s vegan cookies carry the word in their names.
Pecan Pie Chocolate Chunk is a brown sugar cookie loaded with toasted pecans, crunchy toffee, chewy caramel and milk chocolate chunks. Bakers who want the pie itself in the middle can try our Pecan Pie Cookies, which get a well pressed into each one and, once cooled, a spoonful of stovetop pecan filling made with butter, brown sugar and a splash of cream. Apple Crumble Crunch is a cinnamon vanilla sugar cookie filled with apple pie filling and topped with what Insomnia calls crunchy Oat Haus Cinnamon Bun granola. Oat Haus is the brand behind Granola Butter, an oat-based spread, and it sells its own granolas too. Closer to home, our Apple Pie Cookies wrap a cinnamon skillet apple filling in store-bought pie crust under a little lattice, and our Apple Pie Cookie Bars are where the crumble comes in: one buttery cinnamon mixture makes both the pressed crust and the topping over the apples.
What they cost and how to get them
At Insomnia’s IWP Flagship Bakery on South Broad Street in Philadelphia, each of the three was $3.39 for pickup on November 6. That’s 40 cents more than the regular Classic cookies there, such as Chocolate Chunk and Snickerdoodle, at $2.99. Insomnia’s site shows a price only after you pick a bakery, so check the one nearest you through its Find a Bakery page.
A banner across Insomnia’s site on November 6 also offered Insomnia Rewards members free delivery on orders of $15 or more, “all month.”
